For a treat from time to time, I like to make lightly glazed carrots as a side for our dinner. This recipe is a variation of a heavily- sugared carrot recipe that I’ve adapted to fit our eating healthy lifestyle.
Ingredients:
10-12 oz. organic carrots, peeled, trimmed and cut into 1 inch long pieces
2 Tbsp. butter
¼ cup molasses
1 ½ tsp raw sugar
Coarsely ground pepper, to taste
Directions:
1. Cook carrots-5 minutes- my preferred method is to steam ,but you could also boil them. Drain. The carrot will seem a little harder than you might like, but they will finish cooking in the glaze.
2. Meanwhile, in small sauté pan over medium-high heat, add butter, molasses and raw sugar.
3. Cook, stirring continually, till sugar is dissolved. Turn heat to low.
4. Add carrots, toss in glaze and let simmer for 3-5 minutes.
5. Pepper to taste, serve while warm
