This healthy recipe is excellent for Baby-led Feeding as soon as baby has established hand dexterity and developed their gag reflex feel free to serve this refreshing salad.
Ingredients:
3 cups fresh green beans- trimmed, cut into 1” pieces
1 large ripe tomato- finely chopped
2 oz. feta cheese- crumbled
Dressing:
3 Tbsp. balsamic vinegar
2 Tbsp. extra virgin olive oil
2 Tbsp. lemon juice
¼ tsp. granulated sugar
½ tsp. sea salt
½ tsp. black pepper
½ tsp. granulated garlic
1 Tbsp. fresh dill- chopped or 1 tsp. dried dill
Directions:
- Cook green beans for 10 minutes- steaming or directly in boiling water
- Meanwhile, whisk together dressing ingredients in medium bowl.
- Add tomatoes, feta.
- After cooking, run beans under cold water till cooled. Drain
- Add to mixture- toss well.
- Chill for one hour, serve cold.
