Green Bean, Tomato and Feta Salad

Green Bean Salad

This healthy recipe is excellent for Baby-led Feeding as soon as baby has established hand dexterity and developed their gag reflex feel free to serve this refreshing salad.

Ingredients:

3 cups fresh green beans- trimmed, cut into 1” pieces
1 large ripe tomato- finely chopped
2 oz. feta cheese- crumbled

Dressing:

3 Tbsp. balsamic vinegar
2 Tbsp. extra virgin olive oil
2 Tbsp. lemon juice
¼ tsp. granulated sugar
½ tsp. sea salt
½ tsp. black pepper
½ tsp. granulated garlic
1 Tbsp. fresh dill- chopped or 1 tsp. dried dill

Directions:

  1. Cook green beans for 10 minutes- steaming or directly in boiling water
  2. Meanwhile, whisk together dressing ingredients in medium bowl.
  3. Add tomatoes, feta.
  4. After cooking, run beans under cold water till cooled. Drain
  5. Add to mixture- toss well.
  6. Chill for one hour, serve cold.
